1st Day of School

Today was the first day of preschool for Jace.  I’m glad to report there were no tears from any parties involved.

…the fort offered such a fun place to take pictures with the beautiful old brick…I could have spent hours there taking pictures…unfortunately neither of the kiddos were too willing to cooperate...

Fort Macon

We headed out to Atlantic Beach to check out Fort Macon State Park.  We packed lunches, had a picnic lunch overlooking the Beaufort Inlet and then took a tour of the fort.  They even had a demonstration of a musket loading and firing.  Jace wasn’t so sure about that.  He enjoyed the park, but was a little dismayed that there wasn’t a playground.

Father & Daughter

Spinach & Ricotta Stuffed Shells

…super fast and really yummy!!

Serves 4 Hands-On Time: 20m Total Time: 45m

Ingredients
  • 20 jumbo pasta shells (about half a 12-ounce box)
  • 1 24-ounce jar marinara sauce
  • 2 15-ounce containers ricotta
  • 2 cups baby spinach, chopped
  • 1/2 cup grated Parmesan (2 ounces)
  • kosher salt and black pepper
  • 1/2 cup grated mozzarella (4 ounces)
  • green salad (optional)
Directions
  1. Set an oven rack to the highest position and heat oven to 400° F. Cook the pasta according to the package directions; drain and run under cold water until cool.
  2. Spread the marinara sauce in the bottom of a large broilerproof baking dish.
  3. In a bowl, combine the ricotta, spinach, Parmesan, ½ teaspoon salt, and ¼ teaspoon pepper. Spoon the mixture into the shells and place them on top of the sauce. Sprinkle with the mozzarella and bake until the shells are heated through, 10 to 12 minutes.
  4. Increase heat to broil. Broil the shells until the cheese begins to brown, 2 to 5 minutes. Serve with the salad, if desired.

Sweet boy

he is my sweet boy…he really is…despite the fact this afternoon he came to show me a handful of poo…he tried to crack an egg on his sister’s head and refused to nap…but tomorrow is another day…and he will still be my sweet boy…

Poor baby girl…Jace decided she needed a bucket on her head…it didn’t quite fit…this happened yesterday. 

Today:

Jace:  “What happened to Sydney’s nose?”

Me:  “You know what happened to her nose?”

Jace:  “She needs a new nose. I’m going to get her a new nose”

Me:  “Where are you going to get a new nose?”

Jace: “At the the store.”

Oh if it was that easy…I would like a new…

Sydney loved her first experience at the beach…we crawled all around, ate lots of sand and splashed in the water.

Fishing

We headed to Ocracoke this past Wednesday to meet up with some friends.  We took the ferry over, did a little fishing, had lunch, hit the beach and headed back home.  It was a long day, but so much fun.  Jace enjoyed his looking for fish, touching the squid bait, and kept asking to hold the fish clip (aka fishing pole).  So cute.

Gimpy

Here is Sydney crawling…we call her our little gimp right now. We’ve been going to physical therapy once a week now for about a month and she’s definitely come a long way, but isn’t quite ready to give up her sweet little gimpy crawl.
